I can’t think of a more perfect combination than dinner outdoors. It combines our two most favorite past times, and we are at our finest while eating with a little breeze in the air. 😉 Truly, all jokes aside, being outside in Phoenix during the months of April and May are pure bliss, so we always take full advantage of all these perfect spring nights. There is definitely a point in the summer when being outside isn’t really an option here and we hibernate like it’s winter in New York, so you better believe we will be grilling until the heat gets unbearable.
We were so excited to partner with Weber and try out one of their new gas grills, the Genesis II Series. We chose the stainless steel option and love that this version has a side burner which makes heating up those sides and sauces so convenient. A feature we’ve already used so much is the iGrill 3 digital thermometer, which allows us to check the temperature of our food via bluetooth, so we can get notified to our phones when our food is at the perfect temperature. It’s a must have, in our opinion! Our families are both big BBQ fans, so grilling outside always brings us back to those summer evenings on Long Island with our friends and family. We love it!
One of our favorite dishes to grill are salmon & lemon kebabs. Weber has these stainless steel skewers that make it super easy and then you can just throw them in the dishwasher after. It’s a quick meal to grill and is so fresh and tasty on a spring or summer night. We’re definitely not food bloggers, but it’s so easy to prep so we thought we share, because any meal that involves less prep and more time with loved ones is a plus in our book.
We bought skinless salmon from our local butcher, cut it into chunks and drizzled some olive oil on top, with a bit of red pepper, black pepper, cumin, and sesame seeds. We threw that on the grill sandwiched between lemon slices with some fresh oregano.
We just purchased our first home and I am dying to get a grill! As a pescatarian, love the idea of salmon kabobs too!
