As 2017 comes to an end, we’ve started to think about personal goals and things we want to work on in the new year. The hardest thing for us in 2017 has been getting our butts in the kitchen to make a meal. It’s hasn’t been easy for us to stop working when we have a good rhythm going. Truthfully, we often work until our bellies sound the alarms, and by that point, we’re not about to get in the kitchen and start cooking from scratch. Yes, we are super guilty of Chinese take-out, pizza nights, or heading out to one of our favorite restaurants in lieu of cooking from home. Going out for dinner is sometimes the only way for us to break up a long day of working from home, but we’re looking to make some serious changes in 2018.
When we added the KitchenAid® Artisan® Stand Mixer to our kitchen, it reminded us that recipes aren’t always pages long, cleaning can be left for our dishwasher, and we can feel proud about trying something new together in the kitchen. It’s something we’ve been doing a bit of as the year winds down and maybe our biggest goal for 2018. We know everyone makes resolutions and by the third week of January they’ve moved on, but hey, we’re going to do our best to stick to it and we’re putting it in writing right here. Ha!
We are far from professionals in the kitchen and usually stick to family recipes, but the Spiralizer Attachment has given us more confidence when trying out recipes we might have shied away from in the past. It truly shocked us when we realized that in under thirty minutes we created this really pretty, tasty dish for ourselves. The dish is called Garlic Lime Cashew Zoodles and if you’re your interested in trying this delicious dish, we found the recipe right over here. Enjoy!
What are some of your goals for 2018? Any ambitious food-related resolutions? We’d love to hear about them in the comments!

I am struggling a lot against my impulses as a pizza addict and easy foods. 2017 was a year that I exaggerated in that part, but 2018 will be different! haha ??
I’m so glad you guys enjoyed my dish! Thanks for linking directly to my recipe. Great photos and I love Kitchen Aid. 🙂
