Breakfast for Dinner

Sometimes you just want breakfast for dinner and the other night we were craving just that…cinnamon apple pancakes to be exact. It really hit the spot in the cozy department and made the kitchen smell sooo good too. We’ve been bookmarking cozy recipes on Pinterest lately and this one caught our eyes.

We recently added a KitchenAid® Artisan® Stand Mixer to our arsenal of cooking gadgets and now we want to spend every minute making sweet treats. This was one of those items we had on our wedding registry when we were engaged and just never received, so we’ve been having a ton of fun with it. It’s such a quality addition to our kitchen and we love the Empire Red color too, especially this time of year!

The photo hanging on the wall above the mixer is a photo of my mom’s grandmother, my great grandmother on her honeymoon. She was the quite the cook I hear, so it’s special to have a sweet reminder of her in the kitchen. Like my mom always says, “…it’s where she loved to be”.

A big thing on our Christmas dates list this year was trying a cooking class. We always look for new things to do together, and although we haven’t made our way to a class like that just yet, a cozy evening at home taking our best stab at a new recipe was just as fun. I feel like making time to do these things together are so important, and yes, taking silly pictures along the way too. 😉 Maybe our great grandkids will look through these photos one day and who knows, maybe even hang one in their kitchen! I love having these to look back on.

Anyway, back to the pancakes…they were super simple and felt rather indulgent…kind of a meal and dessert all in one. The apple cinnamon topping might have been our favorite, with chunks of fresh apples, apple cider, brown sugar and cinnamon. We’re definitely not experts in the kitchen, but sometimes it’s about the process more than the end result. However, the pancakes were pretty tasty. 😉

  1. That was one of the things I wanted to register for when we got engaged but just never did. Now that I cook so much more than when I was engaged I def. think it is something that I need to purchase in the future!
